Job Description
- Check with Preparation Kitchen's Chef for a list of all daily preparations (quantities, priority levels and special tasks).
- Make sure Namariq’s standard recipes are being applied at all times (preparation, cooking, storage, etc.)
- Perform skilled cooking and food preparation.
- Assist the station cook in planning the quantity of food to be prepared for the coming shift.
- Control wastage and record/report all wastage.
- Communicate to the station cook queries and issues related to availability.
- Guarantee that fresh and dry products are being used and stored as per the FIFO procedure.
- Ensure temperature records and food labeling are maintained and up to date.
- Ensure that all equipment are kept clean and in excellent working condition through personal inspection and by following the central kitchen’s preventative maintenance programs.
- Continuously check that products in Namariq’s Preparation Kitchen are stored in proper labeled containers at the appropriate temperatures.
- Follow HACCP and other safety and quality control measures throughout the production process.
- Stay updated on all Namariq daily formulas including fixed food menu items.
- Assist the Preparation kitchen Chef to plan the quantity of food to be prepared for the next shift.
- Monitor Food & Beverage consumption to anticipate amounts for the Preparation kitchen requisition orders.
- In the absence of the station cook, make sure kitchen is clean and evaluate the hygiene habits and the general appearance of the staff.
- In the absence of the station cook, supervise the receiving procedures of all goods; generally evaluate the quality and quantity of the received goods waste percentage and the net yielded value.
- Help in any area of the Preparation kitchen/BOH when circumstances dictate
Qualifications:
A minimum of 3 year(s) of working experience is required.
Candidates must be at least a high school graduate.
Male applicants are preferred for this role.
- Diploma in Hotel Management / Culinary related course
- Minimum of 3 year of experience as Line Cook Cold specialized in making different types of salad and have related labor camp setting and industrial catering work experience
