Job Description
- 1. Create and develop dessert recipes, taking into account seasonal ingredients, dietary restrictions, and guest preferences. may also be responsible for creating new dessert menus.
- 2. Oversee the production of a wide range of baked goods, including cakes, pastries, bread, and chocolates. mixing, shaping, baking, and decorating items to perfection
- 3. Is responsible for the artistic presentation of desserts, ensuring that they are visually appealing and align with the hotel's standards.
- 4. Collaborate with the executive chef and F&B team to plan dessert menus that complement the overall dining experience.
- 5. Rigorously maintain quality control, ensuring that all desserts meet the hotel's standards for taste.
- 6. Select and source high-quality ingredients, including chocolates, fruits, nuts, and dairy products, to create premium desserts.
- 7. Train and supervise pastry cooks and assistants, ensuring that they adhere to the hotel's standards..
- 8. Manage ingredient inventory, monitor stock levels, and order supplies as needed to maintain production.
- 9. Strict adherence to food safety and hygiene regulations is crucial in pastry and baking to ensure the safety of guests and staff.
- 10. May create specialty desserts for banquets, weddings, and other special events hosted at the hotel.
Qualifications:
- 1. Required: FIVE-STAR hotel experience in a similar role is a must.
- 2. Must have formal culinary training, often including specialized pastry and baking programs or certifications. A culinary degree or diploma is typically preferred.
- 3. Must have several years of experience working in pastry kitchens, which may include experience as a Sous Chef or Pastry Cook.
- 4. Candidates must have advanced skills in baking and pastry, including knowledge of a wide range of pastry techniques, cake decoration, chocolate work, and dessert presentation.
- 5. Expected to create and develop new dessert recipes and concepts, so creativity and innovation are important.
- 6. Precision in measurement and presentation is crucial in pastry and baking,
- 7. Must be able to work on multiple desserts simultaneously and must manage their time efficiently to meet service deadlines.
- 8. Pastry Chefs may lead a team of pastry cooks or assistants, so leadership and management skills are required.
- 9. The ability to adapt to changing situations and work in a fast-paced kitchen is essential.
