Job Description
- A good cook should know these regional differences and be adept at creating these regional specialties.
- This includes spices like cumin, coriander, turmeric, cinnamon, sumac, and saffron, as well as ingredients like olive oil, garlic, yogurt, pomegranate molasses, and tahini.
- Knowledge of grains (rice, bulgur, freekeh) and legumes (lentils, chickpeas) is also essential.
- Time Management: Arabic cuisine often involves preparing multiple dishes at once. A cook should be able to manage time effectively, especially when preparing meals for larger gatherings or events.
- Food Safety Knowledge: An understanding of food safety practices is critical, including proper food handling, storage, and sanitation. Many employers or kitchens require food safety certification (such as ServSafe or a local equivalent).
- Physical Stamina: Working in the kitchen can be physically demanding, requiring long hours standing, lifting heavy pots, and managing multiple tasks simultaneously. Physical endurance is important.
Qualifications:
A minimum of 3 year(s) of working experience is required.
Candidates must be a Vocational Diploma / Short Course Certificate holder in Others or similar fields.
Female applicants are preferred for this role.
- Experience in Arabic Cuisine: Extensive experience preparing Arabic dishes is essential. This could be gained through working in restaurants, catering, or even in a family setting with a focus on authentic Arabic recipes.
- Familiarity with Regional Variations: Arabic cuisine varies widely across the Middle East and North Africa (MENA) region, from Levantine dishes (like hummus, tabbouleh, and falafel) to North African specialties (such as couscous and tagine).
- Knowledge of Key Ingredients: Understanding essential Arabic ingredients is crucial.
- Cultural Understanding: A strong knowledge of the culture surrounding Arabic cuisine, including the significance of certain dishes for religious or festive occasions (e.g., dishes served during Ramadan, Eid, or weddings).
- Attention to Detail: Precision in flavor balance and presentation is key in Arabic cuisine. A good cook should have a refined palate to ensure that dishes are well-seasoned and flavorful.
- Knowledge of Halal Food Regulations: For Arabic cuisine, it's essential to understand halal dietary laws, especially when working with Muslim clients or communities. This involves using ingredients that comply with Islamic dietary restrictions.
- Restaurant or Catering Experience: Working in a professional kitchen or catering company focused on Arabic cuisine will provide practical knowledge about high-volume cooking, menu planning, and managing a kitchen.
